Is fra Skarø’s sorbets are light, colourful and full of the taste of berries and fruit from a Danish summer. The birch juice and the sugar kelp intensifies the flavour of the berries and adds sweetness to the ice-cream.
We make Is fra Skarø’s sorbets in a range of tastes – all based on sun-ripened organic berries and fruit. Our sorbets have a high fruit content of between 50-55%, with the exception of blackcurrant, which contains 30% - any more and the taste would be too intense.
We have a particular fondness for ingredients like rhubarb and gooseberries, that have somehow lost their rightful place in the contemporary kitchen. As much we can, we source our ingredients from local organic producers. In this way transport time is shorter and fruit and berries can ripen naturally on the plant.
